PE04 Salt Pools Overview
The salt ponds of Maras Peru are at about 10,000 feet elevation but were once at the sea floor. A small spring trickles salt water into almost 5,000 ponds maintained by a local farming cooperative. The water is cut off when the pond is a few inches deep and is then allowed to dry in the Peruvian sun. It is then shipped world wide for use in fine restaurants and by culinary chefs.
